Parmigiano-Reggiano or Parmesan Cheese

Parmigiano-Reggiano! Remember that song about the meatballs and spaghetti? "On top of Spaghetti, all covered with cheese....." Cheesers, you know as well as I do that the cheese they were talking about was Parmigiano or Parmesan as it is sometimes called in the states. The nutty, crumbly and crunchy cheese with a whole lot of history. Its one of the most prized cheeses in the world friends, and in some places it can be used as currency (cash!). Yes, yes, yes, this is a serious cheese.
