Each time I taste a great cheese my mind explodes! Millions of emotions go through my veins, until I can finally get a hold of myself. It is involuntary reaction is built into my DNA, though I believe it allows for me to provide honest, valued reviews of cheese.

It may sound surprising, but I have not tasted every cheese, let alone the numerous varieties each has developed. Take for instance Blue Cheese. Blue cheese has roughly 80 known varieties! The upside of this, it will allow me to write initial reviews of the cheeses I will be tasting as well as give me plenty of content to publish on my blog.
